I absolutely love dinners that are easy to make and easy to clean up, and these Autumn Tin Foil Dinners have Polish sausage, cabbage, and carrots for a tin foil dinner with a definite fall vibe! And I think these are such a fun idea to celebrate the new season.

And yes, this week marks the arrival of fall in the northern hemisphere, and although I don’t like cold weather one little bit, luckily I really do love cold weather foods!

In Utah we have wonderful warm fall days with just a touch of crispness in the air, and I’d cook these tin foil dinners outside on the grill as long as I could. But if the weather is getting colder where you are, or if you decide to make these in a few months for a winter tin foil dinner, just cook the foil packets in the oven which will only take a few minutes longer.

And this is an easy family-friendly meal where you can add higher-carb veggies like potatoes or sweet potatoes for some family members if you prefer. And people who really want to keep the carbs low can use fewer carrots in their foil packet too.

What ingredients do you need for this recipe?

You can use other types of pre-cooked sausage for this recipe, use any sausage you prefer!

How can you make the tin foil dinners lower in carbs?

Check the nutritional information because you might be surprised that this foil-wrapped dinner idea is not that high in net carbs. We did include a few carrots for color but if you want a tin foil dinner that’s Keto, you can definitely leave those out or use less.

How to make the Autumn Tin Foil Dinners:

  1. I found these Teton Waters Ranch 100% Grass-Fed Beef Polish Sausages (with less than one carb per sausage!) at Costco and they were delicious.
  2. Preheat grill to medium-high or preheat oven to 450F/230C.
  3. Cut up a small head of cabbage into bite-sized chunks.
  4. Slice four sausage links, cut red onion into thick slivers, and cut carrots into slices or half-moon slices.
  5. Lay out four double sheets of foil and spray with non-stick spray.
  6. Arrange the cabbage, carrots, and onions on each pair of foil sheets, season with salt and fresh-ground black pepper to taste and some dried thyme and add some butter.
  7. Then add the slices of sausage, wrap the inner packet first, then fold over the outer sheet of foil and tightly roll up the ends.
  8. Cook Autumn Tin Foil Dinners about 20-25 minutes on a grill that’s pre-heated to medium high, or cook about 30-35 minutes if you’re using the oven.
  9. Turn once about half-way through. Serve hot.

Ingredients

  • 12 oz. polish sausage (See notes.)
  • 1 small head of cabbage
  • 2 medium carrots
  • 1/2 large red onion
  • 4 T butter
  • 1/2 – 1 tsp. dried thyme
  • salt and fresh-ground black pepper to taste

Instructions

  1. Preheat grill to medium-high or preheat oven to 450F/230C.
  2. Cut up a small or medium-sized head of cabbage into bite-sized chunks.
  3. Slice four sausage links into slices about 3/4 inch thick, cut red onion into thick slivers, and cut carrots into slices or half-moon slices just slightly thinner than the sausage.
  4. Lay out four double sheets of foil big enough to hold all the ingredients when it’s wrapped into a packet, and spray foil with non-stick spray.
  5. Divide the cabbage, carrots, and onions so one-fourth is on each set of foil sheets, season the vegetables with salt and fresh-ground black pepper to taste and some dried thyme and add about 1 tablespoon of butter.
  6. Then add the slices of sausage on top of the vegetables.
  7. Wrap the inner packet first,  then fold over the outer sheet of foil and tightly roll up the ends. (This recipe has better photos about how to fold the packets together.)
  8. Cook Autumn Tin Foil Dinners about 20-25 minutes on a grill that’s pre-heated to medium high, or cook about 30-35 minutes if you’re using the oven. Turn once about half-way through. Serve hot.

These tin foil dinners could be a good option for a low-carb or low-glycemic diet. For low-carb or Keto diets, you can adjust the amount of carbs by how much carrot or onion you use. They can work for any phase of the original South Beach Diet if you omit carrots for Phase One. South Beach would prefer turkey sausage for less fat.
